Mogango, also known as moganga, mogango and bugango, is a species of Cucurbita maxima. Popularly it is a species of pumpkin rarely found for sale in the metropolis markets, being more used in the corners of the Brazilian farms. It is much appreciated in the interior of Minas Gerais state and in the Recôncavo Baiano, being popular in quilombola communities and candomblé rites. The fruits are dark green with lighter streaks. When they mature they turn yellow. It has a slightly extended globular shape. It is used in assorted culinary recipes whether it is cooked and mixed with the salad, baked goods, purees, creams, soups and in juices. It can be boiled with the skin, serving to create various recipes, either with chicken, gratin with shrimp or just cooked in water and salt, seasoned with olive oil.
