WORK IN PROGRESS...
NEEDS A FEW MORE TWEAKS.
I built an Atari 2600 paddle to USB adapter to use with my Mister FPGA. Github is here...

There are versions to work with Sega, Atari, Commodore, etc.
This thing is a case for the Arduino Pro Micro and a serial port. I had some leftover parts from a Hypercube build that I used for bolts/fasteners but you can supplement your own. The holes to keep the case together are 3mm so a 3mm bolt will thread fine. If you want something more robust, I used 3mm knurled brass inserts (OD 3mm x 4.2mm). I also used 3mm x 12mm socket head bolts. For the serial port, I used the same 3mm x 12mm socket head bolts and leftover 3mm knurled brass inserts from my Hypercube (OD 4mm x 5.5 mm). These actually fit into the serial port casing by pressing them in with some pliers. You can supplement with a 3mm nut or whatever bolt/nut combo you have. The fasteners that come with the serial port will work as well but you will need pointy needle nose pliers to tighten them down as there isn't much room.
There is a version with an Atari logo and one plain/no logo.
